Soft and juicy sweet made with tiny balls made of gram flour and sugar

Ingredients
  • Gram flour/Besan - 1 cup - 100g
  • Sugar - 1 cup - 200g
  • Salt - 1 pinch
  • Baking soda - 1 pinch
  • Orange food colour- 1 pinch
  • Cardamom powder - ¼ tsp
  • Cashew nuts - 10
  • Ghee - as needed
  • Cooking oil - for frying
Instructions
  1. Add a cup of besan to a bowl.

  2. Add a pinch of salt to it.

  3. Then add 1 pinch of baking soda.

  4. Add a pinch of orange food colour.

  5. Once mixed then add a little water and mix like a paste without lumps.

  6. Then add the required water and mix to make dosa batter consistency.

  7. Heat oil in a pan for frying, you can use a boondi ladle or motichur ladle otherwise you can use a strainer, pour the batter and tap. You can see tiny boondis dropping in oil.

  8. It will take 20 - 30 seconds for boondis to cook. Once done, keep the boondis in the kitchen towel to observe excess oil. Repeat the same until the batter is done.

  9. Add a cup of sugar to a pan.

  10. Add ¼ tsp of cardamom powder.

  11. Add a cup of water and bring to a boil over medium heat.

  12. Bring it to a boil until it becomes viscous.

  13. Now add the prepared boondis to it.

  14. Put on medium heat and stir for 2 minutes.

  15. Then turn off the stove and cover.

  16. Stir after 20 - 30 minutes and let the boondi absorb the sugar syrup.

  17. Now add the chopped cashews.

  18. Once stirred, apply ghee in hand and roll into small balls.

  19. Delicious motichur laddu is ready to serve.
