Indian Carrot Pudding
Thoroughly wash the 1200 grams of carrots and peel them.
You can grate in a vegetable grater or roughly chop them. Add them to the mixer grinder,grate finely in the pulse mode, you can use the food processor as well.
Add 2 tbsp ghee to a pressure cooker.
When the ghee is hot add the grated carrots and saute for 2 - 3 minutes. If you are using red carrots, you can skip this step. Red carrots can be added directly to the milk.
Then add 2 cups milk and stir well.
Cover the pressure cooker and let it boil for 2 whistles.
Once the pressure is released, Turn on the stove and add 1 cup of sugar.
Cook on medium flame, until it thickens.
Once the moisture has evaporated add ¼ cup of milk powder.
Then add ¼ cup of ghee, ¼ tsp of cardamom powder.
After mixing well for 2 minutes, add the chopped almond, pistachio, and cashews.
Stir well and turn off the stove.
Delicious carrot halwa is ready to serve.
