Indian Carrot Pudding

Ingredients
  • Carrots - 1.2 kg (1200g)
  • Sugar - 1 cup - 200g
  • Milk - 2 cups - 500ml
  • Ghee - ¼  cup+ 2 tbsp
  • Milk powder - ¼  cup
  • Cardamom powder - ¼ tsp
  • Chopped almonds, pistachios and cashews - as needed
Instructions
  1. Thoroughly wash the 1200 grams of carrots and peel them.

  2. You can grate in a vegetable grater or roughly chop them. Add them to the mixer grinder,grate finely in the pulse mode, you can use the food processor as well.

  3. Add 2 tbsp ghee to a pressure cooker.

  4. When the ghee is hot add the grated carrots and saute for 2 - 3 minutes. If you are using red carrots, you can skip this step. Red carrots can be added directly to the milk.

  5. Then add 2 cups milk and stir well.

  6. Cover the pressure cooker and let it boil for 2 whistles.

  7. Once the pressure is released, Turn on the stove and add 1 cup of sugar.

  8. Cook on medium flame, until it thickens. 

  9. Once the moisture has evaporated add ¼ cup of milk powder.

  10. Then add ¼  cup of ghee, ¼ tsp of cardamom powder.

  11. After mixing well for 2 minutes, add the chopped almond, pistachio, and cashews.

  12. Stir well and turn off the stove.

  13. Delicious carrot halwa is ready to serve.
