Thinai is a type of millet that is grown in southern India. It's a traditional crop known as foxtail millet. It is healthy and nutritious, and we can make a variety of south Indian breakfast, lunch, and dinner dishes. However, thinai kozhukattai is a healthy and tasty savoury item; typically, a variety of kozhukattai is prepared on Ganesha Chaturthi.

Ingredients
  • Millet - ½ cup 
  • Cooking oil - 1 tsp
  • Mustard - ½ tsp
  • Urad dal - ½ tsp
  • Curry leaves - few
  • Dry chilli - 1
  • Asafoetida powder - 1 pinch
  • Salt - As required 
Instructions
  1. Add ½  cup of millet to a pan.

  2. Keep it on low flame and fry until fragrant.

  3. Then let it cool and add it to the mixer and grind it.

  4. Heat a tablespoon of oil in a pan and add ½ tsp of mustard, ½ tsp of urad dal, a dry chilli, a pinch of cardamom and a pinch of asafoetida powder.

  5. Add a cup of water to it and boil it.

  6. Add the required amount of salt to it.

  7. When the water boils, add the ground millet.

  8. Keep on low flame and stir till it thickens a bit.

  9. Then turn off the stove, cover it and let it cool.

  10. After it cools down a bit, pour it into a bowl and knead it once.

  11. Roll it into small balls and press it with four fingers.

  12. Place the prepared kozhukattai on an idli plate or steamer plate greased with oil.

  13. Pour water into the idli pan and heat it, place the idli plate and cook for 10 – 15  minutes. 

  14. Delicious millet kozhukattai is ready.
