Aloo Paratha is a potato stuffed roti. Aloo paratha roti dough stuffed with mashed potatoes and Indian spice powders, rolled thinly and cooked in a tawa, and served along with butter and pickle. Aloo paratha is served as a breakfast or lunch in the northern parts of India. It is perfect for kids' lunch boxes.
In a bowl, add wheat flour, 2 tsp of oil, salt, and required water, knead well, make it a smooth dough. Keep it aside.
Pressure cook potatoes for 3 whistles.
Once done, peel and mash it without lumps.
Add the red chilli powder, curry masala, amchur powder, turmeric powder, chilli powder, and salt.
Mix everything well.
Make the dough into small lemon sized balls. Roll the dough into a circle and dust it with flour.
Keep the stuffing in the centre, seal it and flatten it with your hands.
Roll it with a rolling pin and dust with flour on both sides. Repeat the above steps for all parathas.
Heat the tawa, place the parathas on the pan, gently press with a utensil and apply some ghee/oil on both sides.
Flip it and repeat the same till it turns golden brown and spots appear.
Serve hot with butter.
