Coconut Milk Murukku is a crunchy tasty snack item made for the Diwali festival. It is made with rice flour, urad dal flour, homemade coconut milk sesame. There are different varieties of murukku is in south India like rice flour murukku, roasted gram murukku, urad dal murukku, etc., Coconut milk murukku is a traditional one, with coconut flavour and slightly sweet taste.
In a pan add 1/4 cup of urad dal and roast for 2-3 minutes on medium flame.
Cool down and grind it as a fine powder.
Sieve the urad dal flour to avoid lumps.
In a mixer jar, add 1/4 cup of shredded coconut and little water and make it a fine paste.
Pour it in a strainer and squeeze to take thick milk.
In a bowl add 1 cup of rice flour, 1/4 cup urad dal flour, 1/4 cup butter, 1 tbsp cumin seeds, 1/2 tsp sesame, 1/4 tsp asafoetida, and salt.
Add 1/2 cup of coconut milk.
Make a smooth dough, meanwhile heat oil in a pan.
Grease the murukku maker with oil.
Fill the dough.
In a long spatula squeeze murukku in a circular motion.
Fry the murukku on medium heat oil.
After a few minutes flip it over.
Once bubbles stop, remove from oil and drain it in a paper towel.
