Idiyappam is a popular South Indian breakfast. Idiyappam is made with rice flour, which goes well with coconut milk, kadala curry and stew. Apart from this, you can also serve dessert sev with grated coconut and sugar and pepper sev with salt and pepper. Idiyappam can be made with homemade or store-bought rice flour.
Roast the rice flour on medium heat for 2-3 minutes and keep it aside.
Boil water in the pan, and add oil and the required salt.
Add boiling water with roasted rice flour, and add water little by little. Mix it with a spatula.
When you tolerate heat, gently mix with your fingers.
If the dough is sticky, sprinkle little oil and make a soft dough.
Once done, divide the dough into small portions and fill it in the idiyappam maker.
Grease the steamer plate or idli mould.
Gently press in the circular motion to make idiyappam.
Steam cook for 7-8 minutes.
Serve with grated coconut and sugar.
