Lemon Rice is a popular and most common recipe in South India. It is lemon flavoured rice, seasoned with peanuts. It is a simple and quick dish, a popular lunch box dish that can be prepared within 15 minutes. It goes well with potato roast, raitha, pickle, vegetable curry, kurma, vada, or pakoda.
Heat oil in a pan, add mustard seeds, urad dal and allow it to pop.
Add the curry leaves, dry red chillis, and chana dal and give a quick stir.
Add the peanuts and fry for a minute or two until the peanuts are golden brown.
Add the turmeric powder, asafoetida and salt, and mix everything well.
Now squeeze the lemon juice and turn off the flame.
Mix all ingredients well.
Add the cooked rice and mix gently. Check the salt and adjust accordingly.
Serve hot.
