Mint Pulao is a quick and easy rice variety that is perfect for lunch boxes. Mint Pulao is made with fresh mint leaves, green chillies, cashews, peanuts, whole garam masala and cooked rice.

Ingredients
  • 1/2 bunch Mint Leaves
  • 2 cups Cooked Rice
  • 2 tsp Ghee
  • 1 Bay leaf
  • 3 Cardamoms
  • 5 Cloves
  • 10 Cashew nuts
  • 1/4 cup Peanuts
  • 1/2 tsp Cumin seeds
  • 3 Green chilis
  • 1 Onion
  • 1 tsp Ginger garlic paste
  • 1/2 tsp Garam masala
  • Salt as needed
Instructions
  1. In a mixer jar, add 1/2 bunch of mint leaves (washed and rinsed).

  2. Make it a fine paste.

  3. In a pan, heat 2 tsp ghee.

  4. Add 1 bay leaf, 3 cardamoms, 5 cloves, 10 cashews and 1/4 cup peanuts.

  5. Cook until cashews become golden brown.

  6. Add 1/2 tsp of cumin seeds and 3 green chilis and cook for a minute.

  7. Now add finely chopped onion, cook until it becomes translucent.

  8. Add 1 tsp of ginger garlic paste and cook until the raw smell leaves.

  9. Now add 1/2 tsp of garam masala and required salt, combine well and cook for a minute.

  10. Add ground mint paste, cook for 1-2 minutes or till the raw smell leaves.

  11. Add the cooked rice and combine well.

  12. Serve hot with raita.
