Ingredients
  • 1 cup Rice flour (200 grams)
  • 1/4 cup Wheat flour (50 grams)
  • 1/2 cup Jaggery (100 grams)
  • 1/2 cup Coconut
  • 2 Ripe bananas
  • 1/2 tsp Cardamom powder
  • 1/8 tsp Baking soda (optional)
  • 1/4 cup Ghee (approx.,)
Instructions
  1. In a saucepan add 1 cup jaggery and 1/4 cup water.

  2. Bring it to boil till jaggery is melted. Once done keep it aside.
  3. In a bowl add 1 cup rice flour and 1/4 cup wheat flour.

  4. Strain and add jaggery syrup and combine everything.

  5. Add 1/2 cup of shredded coconut.

  6. Add 2 ripe bananas.

  7. Add 1/2 tsp cardamom powder and 1/8 tsp of baking soda.

  8. Mix everything well till it becomes idli batter consistency (for achieving the consistency you can add water).
  9. Meanwhile, heat appe/paniyaram pan and 1 tsp of add ghee on each cavity.

  10. Add batter and cook for 2 – 3 minutes.

  11. Flip it over and cook for a minute.

  12. Once done remove from the heat and serve hot.

Recipe Notes
  • You can make it only with wheat flour, without adding rice flour.
  • You can replace the rice flour with maida.
  • I have used shredded coconut, you can fry the shredded in ghee or use finely chopped fresh coconut fried in ghee, it will be tastier than shredded coconut.
  • Baking soda is optional you can skip baking soda if you don't like it.
