Pavakkai Fry is a crispy fry that goes well with sambar and rasam rice. Many people do not like pavakkai because of its bitterness, but everyone likes to eat it fried like this. This is simple and quick food. Suitable for people with diabetes.

Ingredients
  • 3 Bitter gourd | Pavakkai
  • 1/2 tsp Chilli powder
  • 1 pinch Turmeric powder
  • 1/2 tsp Coriander powder
  • 1/2 tsp Rice flour
  • 1 tsp Lemon juice
  • 4 tsp Oil
  • 1/4 cup Buttermilk
  • Salt as needed

Preparation
  1. Rinse and cut the bitter gourds into thin roundels and remove the seeds.

  2. Dissolve ½ tsp of salt in buttermilk and soak the bitter gourd pieces in it.

  3. After 10 mins, squeeze the buttermilk completely and keep it aside.

Method
  1. Take the bitter gourds in a bowl, and add salt, turmeric powder, chilli powder, coriander powder, and rice flour.

  2. Mix everything well and add lemon juice, keep it aside for 10 minutes.

  3. Heat oil in a pan, and shallow fry the bitter gourds.

  4. Fry till golden brown and crisp.

  5. Once done, remove it from the oil.

  6. Serve hot with rice.
