Poori Masala is the perfect side dish for Puri. Aside from the puri, the potato masala is good with chapatis, and you can combine it with bread toast, batura and dosa. It is made with cooked potatoes, onions and green chillies. Which is easy to prepare and delicious.

Ingredients
  • 3 Potatoes
  • 2 Onion
  • 2 tsp Oil
  • 1/2 tsp Mustard seeds
  • Few Curry leaves
  • 1/2 tsp Cumin seeds
  • 1/2 tsp Urad dal
  • 2 tsp Chanadal
  • 4 Green chilis
  • 1 inch size Ginger
  • 5 Garlic
  • 1 tsp Besan flour
  • 1/2 tsp Turmeric powder
  • Salt as needed
Instructions
  1. Heat 2 tsp of oil in a pan, add 1/2 tsp of mustard seeds and allow them to pop.

  2. Add curry leaves, 1/2 tsp of cumin seeds, 1/2 tsp urad dal and saute for a minute.

  3. Add 2 tsp chana dal and cook till it comes to a nice aroma.

  4. Add 4 green chilis, 5 chopped garlic and chopped ginger.

  5. Cook until the raw smell leaves.

  6. Add 2 thinly sliced onions.

  7. Cook until onions become soft.

  8. Add the required salt and 1/2 tsp of turmeric powder and combine well.

  9. Add 1-2 cups of water and boil for a minute.

  10. Cook 3 potatoes, peel and slightly mash with hands.

  11. Add potatoes and mix gently and cook for 2-3 minutes.

  12. In a bowl add 1 tsp of besan/chickpea flour, add 4-5 tsp of water and mix until no lumps.

  13. Add besan flour mixture and combine well.

  14. Cook for one more minute and turn off the flame.

  15. Serve hot with poori.
