Mixed vegetable rice cake
Heat oil in a pan, add the chopped onions and cook till it becomes translucent.
Add the chopped carrot, potato, coriander leaves and sauté for a minute.
Now add the salt, chilli powder, and turmeric powder.
Add a little water, and cook covered for 5 minutes or till the water is absorbed.
Mix the vegetable mixture with the idli batter and make idlis.
Let it steam for 15 minutes.
Serve hot with chutney or sambar.
