Moist and Spongy Cake without Egg
Spread oil/butter on a 6-inch cake pan and place parchment paper on it. Preheat the oven to 360 degrees Fahrenheit/180 degrees Celsius.
In a bowl add ½ cup sugar and ⅓ cup yoghurt and mix with a whisk until the sugar dissolves.
Add ½ cup cooking oil, 1 tsp vanilla essence and mix well.
In another bowl place a sieve, and add a cup of flour, 1 tsp baking powder, ¼ tsp baking soda and ¼ tsp salt and sift it.
Gently add the sifted flour into the wet ingredient mixture.
Mix until the batter lifted with a whisk or spatula falls back down into a bowl slowly forming a ribbon.
Now pour the batter into the cake pan.
Place the cake pan in the oven and bake for 40 to 50 minutes.
When the cake is ready, place it on a cooling rack and let it cool.
Frost, once it cools down if desired.
