Almond Milk is a rich and creamy drink made with milk and almonds, flavoured with saffron. It is a quick and simple dish, suitable for all special occasions with a meal or as a dessert or a welcome drink, you can serve it hot or cold. It is a healthy and yummy dish.
Soak a pinch of saffron in 1/4 cup milk.
Bring water (approximately 250 ml) to a boil in a saucepan, add 1/2 cup almonds and cook for 2-3 minutes.
Drain the almonds with a strainer and rinse with cold water.
Gently squeeze to remove the skin.
Add 1/4 cup milk and peeled almonds to the mixing jar. Grind into a coarse paste and set aside.
Add 1/2 litre of milk to a pot and boil for 10 minutes over medium heat.
Then add ground almond paste and mix well.
When done, add 1/2 cup sugar and saffron milk.
Add crushed pistachios and almonds and mix well.
Cook for another 2 minutes.
Serve hot or chilled.
