Almond Milk is a rich and creamy drink made with milk and almonds, flavoured with saffron. It is a quick and simple dish, suitable for all special occasions with a meal or as a dessert or a welcome drink, you can serve it hot or cold. It is a healthy and yummy dish. You can prepare and refrigerate for the next day. There are so many kheer varieties like sago kheer (javvarisi payasam), rice kheer (pal payasam), which are the most popular kheer varieties in south India, it is served on special occasions like marriage after the heavy/grand meal.

Notes

  • While preparing almond milk, peel off the almond skin, otherwise, it may taste slightly bitter.
  • Sugar can be replaced with the same quantity of condensed milk.
  • To enhance the taste, you can also soak and grind, cashew nuts and pistachios along with almonds.
  • Badam milk can be served hot or refrigerated for 2-3 hours and served chilled.
  • You can adjust the sugar and milk according to your taste.
  • You can add cardamom powder to enhance the flavour.

Ingredients
  • 1/2 cup Almond|Badam
  • 1/2 cup Sugar
  • 1/2 liter Milk
  • 1 pinch Saffron strings
  • 1/2 cup Milk for saffron milk and grinding
  • 10 Pistachios (optional)
  • 5 Almonds
Instructions
  1. Soak a pinch of saffron in 1/4 cup milk.

  2. Bring water (approximately 250 ml) to a boil in a saucepan, add 1/2 cup almonds and cook for 2-3 minutes.

  3. Drain the almonds with a strainer and rinse with cold water.

  4. Gently squeeze to remove the skin.

  5. Add 1/4 cup milk and peeled almonds to the mixing jar. Grind into a coarse paste and set aside.

  6. Add 1/2 litre of milk to a pot and boil for 10 minutes over medium heat.

  7. Then add ground almond paste and mix well.

  8. When done, add 1/2 cup sugar and saffron milk.

  9. Add crushed pistachios and almonds and mix well.

  10. Cook for another 2 minutes.

  11. Serve hot or chilled.

Method

  1. Bring water (250 ml approx.,)to a boil in a saucepan, add 1/2 cup of badam and cook for 2-3 minutes.

  2. Drain the almonds with a strainer and wash with cold water.

  3. Gently squeeze to remove the skin.

  4. Add 1/4 cup of milk and peeled badam to a mixer jar. Grind it a coarse paste, and set aside.

  5. In a pan add 1/2 liter of milk and boil on a medium flame for 10 minutes.

  6. Then add ground almond paste, combine well.

  7. Once done, add 1/2 cup of sugar, and saffron milk.

  8. Add crushed pistachios and almonds and mix well.

  9. Cook for another 2 minutes.

  10. Serve hot or chilled.
