Mixed Vegetables Quinoa Pasta is a healthy pasta variety it becomes delicious when added with Indian spices and herbs, it is a quick dish, perfect for lunch box. I have used quinoa pasta, you can use regular or multigrain pasta with the same recipe.

Ingredients
  • 2 cups Pasta
  • 1 Onion
  • 1 Tomato
  • 3/4 tsp Ginger garlic paste
  • 2 tsp Oil
  • 1/2 tsp Chili powder
  • 1/2 tsp Coriander powder
  • 1/2 tsp Garam masala powder
  • Salt as needed
  • Few Coriander leaves
  • 1 cup Mixed vegetables (chopped beans & carrot, peas, corn)
Instructions
  1. Boil water in a pan add salt and 1 tsp of oil, add pasta and cook for 6-8 minutes.

  2. Once done, drain and run under cold water and keep it aside.

  3. Heat oil in a pan, add chopped onion saute till it becomes translucent.

  4. Add ginger-garlic paste and cook till the raw smell leaves.

  5. Add the chopped coriander leaves.

  6. Add chopped/pureed tomatoes.

  7. Add chilli powder, coriander powder, garam masala powder, and salt.

  8. Combine everything and add a little water, cook for a minute.

  9. Now add the mixed vegetables and cook covered for 3-5 minutes.

  10. Once done, add cooked pasta and mix well.

  11. Cook for a couple of minutes and serve hot.
