Murunga Keerai Kootu is an Indian style lentil stew with drumstick leaves. it is a nutrient-packed food, rich in iron, helps in strengthening bones, likewise, Drumstick leaves support our healthy life in many ways. Murunga keerai kootu is cooking drumstick leaves along with moong dal or toor dal and mixed with coconut and jeera paste along with the spices.
Remove the leaves from the stem, rinse 2 or 3 times.
Pressure cook the toor dal for 2 whistles.
In a mixer jar, add grated coconut, cumin seeds, cashew nuts and grind into a smooth paste with a little water and keep it aside.
Heat oil in a pan, add mustard seeds, allow it to pop, then add urad dal and red chilli.
Add the chopped onion and saute for 2-3 minutes.
Add the drumstick leaves, salt, and turmeric powder, mix everything well.
Add ΒΌ cup of water, and cook covered for 5-10 mins.
Now add cooked toor dal, sambar powder, asafoetida, and cook for 5 minutes.
Add the coconut paste, combine everything well, and then turn off the flame.
Serve hot with rice.
