Tomato Pulao is a tomato flavoured rice, south Indian style spicy and tangy rice, which is perfect for lunch box and you can use the left-over rice effectively. This is my family's favourite food ever. I made it in a biryani style that is tastier and flavourful than the usual tomato pulao. I did not add any vegetables, you can add vegetables like potatoes, carrots or green peas to enhance the taste. Tomato pulao goes well with potato roast, chips, and raita.
Heat 2 tsp of oil in a pan and add 1 sliced onion, saute till it becomes translucent.
Add 10 cashew nuts, cook till the cashews turn light brown.
Add 1 tsp of ginger garlic paste, 3 green chillis, and a few chopped coriander leaves, mix everything well, and cook till the raw smell goes off.
Add 1/4 tsp turmeric powder, 1 tsp chilli powder, 1/2 tsp coriander powder, 1/2 tsp red chilli powder, 1/2 tsp garam masala, needed salt, combine everything well.
Add 2 chopped tomatoes, cook till tomatoes become mushy.
Add 1/4 cup water and cook covered for 10-15 minutes or cook until the oil separates.
Add the cooked rice and mix gently.
Finally, add 2 tsp of ghee and sprinkle some coriander leaves.
Serve hot with raita.
