
As we know sambar is a south Indian dish, even it is everyday food in TamilNadu, there are verities of sambar recipe, and we can make sambar with almost all kind of vegetables, like a drumstick, raw mango, pumpkin, radish, carrot, potato, tomato, mixed vegetables and many more. Sambar is such a healthy dish because of its lentils, tamarind pulp, vegetables, curry leaves, etc.,

- 3 Brinjal (medium size violet brinjal)
- 1/2 cup Toordal-1/2 cup
- 1 gooseberry sized ball Tamarind
- 10 Shallots
- 1 tsp Sambar powder
- 1 tsp Oil
- 1/2 tsp Mustard seeds
- 1/4 tsp Urad dal
- 2 Green chilis
- Few Curry leaves
- 1/4 tsp Asafoetida
- Salt as needed

Wash and brinjals and cut it into small pieces.

Keep it in a cup of water.

Wash and pressure cook toor dal for 2 whistles.

Soak tamarind in the water.

Cut shallots into small pieces.

Heat oil in a pan or pressure cooker.

Add mustard seeds allow it to splutter, then add urad dal and curry leaves and green chilis.

Then add shallots, saute for a minute.

Add brinjal pieces, mix gently, cook for a couple of minutes.

Add salt, asafoetida, chili powder, and turmeric powder.

Add cooked dal and tamarind pulp.

Cook covered till brinjal become tender or pressure cook for 1 whistle.

Serve hot with rice.
