Sambar is South India’s traditional dish is sambar, particularly in Tamil Nadu. All types of tiffin items pair well with a tasty and nutritious sambar made with toor dal and vegetables. served with vada, pongal, upma, idli, and dosa. In addition, the delicious sambar-idli is made by soaking small idlis in sambar. The sambar powder that is added to the sambar gives it flavor. There are numerous ways to make sambar powder. Sambar powder quality and quantity have an impact on how it tastes. I’ve provided a very quick sambar recipe in this post that can be prepared in 30 minutes. Idli or dosa can be quickly prepared while sambar is made.


A few tips to make delicious idli sambar

  • Cook the toor dal until it is quite soft by adding a clove of garlic, a pinch of turmeric powder, and asafoetida powder.
  • Dal won’t spill out of the cooker if you add a tablespoon of ghee or sesame oil while it’s cooking.
  • Shallots retain their authentic flavor and aroma when used in place of onions to make sambar.
  • Depending on your preference, add green chilies and sambar powder.
  • You can include any other vegetables you like in addition to the carrots and potatoes. Additionally, brinjals, drumsticks, yellow and white pumpkins, as well as tomatoes, may be added to make sambar.

Ingredients
Ingredients to cook dal
  • Toor dal - ¼ cup
  • Garlic clove - 1
  • Turmeric powder - ¼ tsp
  • Asafoetida powder - A little
 Ingredients for sambar
  • Cooking oil - 2 tsp
  • Mustard seeds - ½ tsp
  • Curry leaves - A few
  • Shallots -10
  • Green chilies - 3
  • Potatoes - 2
  • Carrots - 2
  • Salt - As required
  • Turmeric powder - ¼ tsp
  • Sambar powder - 2 tsp or as required 
Instructions
  1. Using the quantities given above, cook the dal in a pressure cooker for 3 - 4 whistles and keep it aside.

  2. Add 2 tsp of cooking oil to a pan.

  3. When the oil is hot, add 1/2 tsp of mustard seeds and a few curry leaves.

  4. Add shallots and green chilies and saute.

  5. Add carrots, potatoes, or your choice of vegetables and saute it.

  6. After the vegetables are sauteed add little salt and water cover and cook for 5 to 10 minutes. 

  7. After the vegetables are partially cooked, add the required amount of salt for the sambar, 2 tsp of sambar powder, and ¼  of turmeric powder and saute until the raw smell of chili powder goes away.

  8. Then add boiled dal and mix.

  9. Add the required amount of water and cover and boil for another 5 to 10 minutes.

  10. Delicious idli sambar is ready. 

Method
