Carrot Halwa is a delicious and healthy dessert that can be made for all occasions especially on special days like Diwali. Carrot Halwa is more popular in North India than South India, and the carrot halwa made with red carrots has a rich aroma and taste. Carrot Halwa is becoming popular in South India at the present time, especially when it is served in hotels along with Gulabjamun is delicious. Grating carrot is a boring job, and making carrot halwa in the traditional method is time-consuming and a little harder to make, but here in this post, I have mentioned how to make carrot halwa quickly and easily with detailed step by step pictures.

Notes

  • I have used 1200g carrots, its weight is 1 kg after removing the skin and stalks.
  • Red carrots are sweeter and juicer than regular carrots, If the red carrots are not available you can use the regular orange carrots.
  • I do not use red carrots, it is not available where we live in the United States, and if it is available, you should always use it for carrot halwa.
  • You can replace the milk powder with the same quantity of kova/khoya or condensed milk.
  • You can grate the carrots in a vegetable grater or food processor, you can also use the mixer grinder to grate the carrots.
  • While grating the carrots in a mixer jar, always use pulse mode.
  • Instead of cooking it in a pressure cooker, you can also use a heavy-bottomed pot, stirring occasionally, until the moisture in the carrots, milk and sugar has evaporated.
  • Do not cook more than 2 whistles in the pressure cooker, carrots should not be cooked mushy.
  • For 1 kilogram of carrots, I have added 1 cup (200g) of sugar and you can add it according to your taste.

Ingredients
  • Carrots - 1.2 kg (1200g)
  • Sugar - 1 cup - 200g
  • Milk - 2 cups - 500ml
  • Ghee - ¼  cup+ 2 tbsp
  • Milk powder - ¼  cup
  • Cardamom powder - ¼ tsp
  • Chopped almonds, pistachios and cashews - as needed
Instructions
  1. Thoroughly wash the 1200 grams of carrots and peel them.

  2. You can grate in a vegetable grater or roughly chop them. Add them to the mixer grinder,grate finely in the pulse mode, you can use the food processor as well.

  3. Add 2 tbsp ghee to a pressure cooker.

  4. When the ghee is hot add the grated carrots and saute for 2 - 3 minutes. If you are using red carrots, you can skip this step. Red carrots can be added directly to the milk.

  5. Then add 2 cups milk and stir well.

  6. Cover the pressure cooker and let it boil for 2 whistles.

  7. Once the pressure is released, Turn on the stove and add 1 cup of sugar.

  8. Cook on medium flame, until it thickens. 

  9. Once the moisture has evaporated add ¼ cup of milk powder.

  10. Then add ¼  cup of ghee, ¼ tsp of cardamom powder.

  11. After mixing well for 2 minutes, add the chopped almond, pistachio, and cashews.

  12. Stir well and turn off the stove.

  13. Delicious carrot halwa is ready to serve.

Method
