Spinach/keerai is a leafy green, essential for everyday health. It is good to add spinach frequently in our diet. For spinach/keerai kootu, you can use any kind of keerai, it is made with keerai, moong dal, onion, tomato and coconut paste. You can have kootu with plain rice, papads/pickle or you can eat it as a side dish with sambar/rasam rice.

- 1/4 cup Moong dal
- 1 bunch Spinach
- 1 large Onion
- 1 Tomato
- Salt as needed
- 1 pinch Turmeric
- 2 Green chilis
- 1/4 cup Coconut
- 1/2 tsp Jeera
- 1 tsp Oil
- 1 tsp Vadagam
- 1/2 tsp Mustard seeds
- 1/2 tsp Urad dal

In a pressure cooker add washed moong dal and add 1/2 cup water and bring it to boil for 5 – 10 minutes.

Remove the spinach from stems, wash and drain it.

Cut it into small pieces.

Add chopped spinach in the cooker.

Add chopped onion, tomato, green chilis, salt, and turmeric powder and add water.

Pressure cook for 2 whistles.

Meanwhile, add coconut and jeera in a mixer jar make it as a smooth paste.

Once pressure released, add coconut paste and cook for a minute.

In a small pan heat 1 tsp of oil, add Vadagam and allow it to splutter/ season with mustard seeds, urad dal, and curry leaves.

Add seasoning and serve hot with rice.
