Idiyappam is a popular South Indian breakfast. Idiyappam is made with rice flour, which goes well with coconut milk, kadala curry and stew. How to make Idiyappam flour in the home?
- Soak the raw rice for 2 hours.
- When finished, drain the water and dry it on a clean cloth.
- Dry in the shade or under a fan for 2 hours.
- Add to the mixer jar and make into a smooth powder.
- Sieve and add the unground rice with the next batch of rice, repeat until done.
- Dry roast for 2 – 3 minutes on medium flame, cool down and store for up to one month.
- Homemade rice flour is softer and tastier than store-bought flour.
Tips for Soft and Moist Idiyappam
- Add boiling water to Idiyappam flour.
- When you tolerate heat knead the dough well and good for at least 2 – 3 minutes to make the dough smooth.
- Water quantity cannon be mentioned, it depends on the quality of rice, though 1 .5 cups of water may be required for 1 cup of rice, approximately.
- Grease the idiyappam press and mould for a smooth flowing of dough.
Other Varieties
Ragi Puttu – is a tasty and healthy dish that can be made in 15 to 20 minutes and can be served for breakfast or dinner or evening snacks. Ragi flour is a healthy and easy-to-make food along with palm sugar and coconut.

- 1 cup Rice flour
- 1 1/2 cups Water
- 1 tsp Oil
- Salt as needed

Roast the rice flour on medium heat for 2-3 minutes and keep it aside.

Boil water in the pan, and add oil and the required salt.

Add boiling water with roasted rice flour, and add water little by little. Mix it with a spatula.

When you tolerate heat, gently mix with your fingers.

If the dough is sticky, sprinkle little oil and make a soft dough.

Once done, divide the dough into small portions and fill it in the idiyappam maker.

Grease the steamer plate or idli mould.

Gently press in the circular motion to make idiyappam.

Steam cook for 7-8 minutes.

Serve with grated coconut and sugar.
