Avarakkai Poriyal/Broad beans stir fry is a tasty and healthy green vegetable that has lots of health benefits, good in dietary fibre. Avarakkai poriyal goes well with sambar and rasam rice. It is easy to make, quick and healthy. Ingredients

  • Avarakkai/Broad beans – 200 grams
  • Oil – 1 tsp
  • Mustard seeds – ½ tsp
  • Urad dal – ¼ tsp
  • Curry leaves – few
  • Onion – 1 small or 10 shallots
  • Sambar powder – ¼ sp
  • Turmeric powder – ¼ tsp
  • Salt as needed
  • Grated coconut – 2 tsp

Method

1. Chop broad beans.

2. Heat oil in a pan, add mustard seeds and allow it to crackle. Add Urad dal and curry leaves.

3. Add chopped onion and saute for a minute.

4. Add chopped beans, combine well.

5. After a minute, add sambar powder, salt, and turmeric powder.

6. Sprinkle little water.

7. Cook covered for 10 to 15 minutes.

8. Once cooked, add grated coconut, mix well and turn off the flame.

9. Serve hot with rice and sambar.
