It takes place on all special occasions like marriage, festivals, etc. Carrot halwa is originated in Punjab during the Mughal period. Carrot halwa is made with freshly grated carrot, milk, sugar, and served with cashews and chopped nuts.
There are many varieties of halwa prepared in different regions of India, sooji halwa is popular in north India, it is prepared with semolina. Thirunelveli halwa is popular in Tamil Nadu and it is prepared with whole wheat milk. Beetroot halwa is made in the same way as carrot halwa. Carrot halwa is very tasty and healthy compared to other types of halwa.
Notes
- The original recipe for carrot halwa is to cook carrots slowly in milk, you can try this in a pressure cooker or instant pot if you like. According to the experts, slow-cooked halwa is tasty and desirable.
- While making carrot halwa, you can replace the milk and sugar with 1 cup of condensed milk.
- I garnished with chopped cashews and pistachios, you can add roasted nuts and raisins.
- You can adjust sugar according to your taste.
- You can prepare beetroot halwa with the same measurements and instructions, replace the carrots with beetroot.
- For 1 kg of carrots, you will get 350 – 400 g of halwa and you can add carrots as required.

- 1 kg Grated carrot
- 500 ml Milk
- 1 cup Sugar (200 grams)
- 8 tsp Ghee
- 1/2 tsp Cardamom powder
- 2 tsp Chopped nuts

In a heavy-bottomed pan, heat 6 tsp ghee.

Add 1 kg grated carrot and mix well.

Cover and cook for 25-30 minutes on medium flame.

Keep stirring in between.

Add 500 ml milk, mix gently and bring it to a boil.

Cook covered on medium-low flame for 30 minutes.

When the milk is halved, add 1 cup sugar and mix well.

Keep stirring on a medium flame for 20 minutes.

Add 2 tsp ghee, 1/2 tsp cardamom powder, 2 tsp chopped nuts.

Keep stirring on medium-high flame for 5 minutes.

Cook until the halwa thickens.

Carrot halwa is ready now.
