Kovakkai Poriyal | Tindora Stir fry | Dondakaya Fry | How to make Stir fried Tintora

Kovakkai poriyal is a yummy and healthy vegetable side dish for rice verities especially goes well with sambar and rasam rice. It is an easy and quick dish, popular south Indian lunch, made with sliced tindora, chilli powder, coriander powder, cumin powder, and seasoning. I didn’t add onion and coconut, if you wish, you can add chopped onion, before adding tindora, similarly, you can add 2 tsp. of shredded coconut just before turning off the flame.

Ingredients

  • Tindora – 250 grams
  • Oil – 2 tsp
  • Mustard seeds – ½ tsp
  • Curry leaves – few
  • Red chilli powder – ½ tsp
  • Coriander powder – 1 tsp
  • Cumin powder – ½ tsp
  • Salt – as needed

Method

Step by Step Pictures

1. Rinse and cut tindora into thin slices.

2. Heat oil in a pan, add mustard seeds, allow it to crackle and add curry leaves.

3. Add tindora and saute for a few minutes.

4. Add chilli powder, cumin powder, coriander powder, and salt.

5. Combine everything well, and cook on a medium flame for 5-8 minutes.

6. Cook on low flame, till it becomes a slightly golden colour.

7. Serve hot with rice.
