Paruppu Vada/Masala Vada

Paruppu Vada/Masala Vada is a popular snack item of south India. Paruppu vada is made with chana dal, red chili, and curry leaves. You can make variations by adding 1/3 of toordal and 1/3 of moongdal and chanadal, that is mixed dal healthier and tastier than the regular one.

Ingredients
  • 1.5 cups Chana dal
  • 6-8 Red chilis
  • 1/2 cup Onion/shallots (chopped)
  • Few Curry leaves
  • 1 tsp Fennel seeds
  • 1 tsp Jeera
  • Salt as needed
  • Oil for frying
Instructions
  1. In a bowl add washed chana dal and add red chilis.  

  2. Soak for at least 2 hours. 

  3. Once done drain water. 

  4. In a mixer jar, add soaked red chili, onions, curry leaves, salt, jeera, and fennel seeds. Give a quick pulse. 

  5. Add chana dal in a mixer jar. 

  6. Make it as a coarse paste. 

  7. Keep the ground mixer in a bowl, mix well. 

  8. Make it as small patties. 

  9. Heat oil in a pan, add vada one by one. 

  10. Fry it on a medium flame for few minutes or fry till golden brown. 

  11. Once done, drain it in a paper towel and serve hot.
