Thirunelveli Halwa is a traditional halwa made with whole wheat or samba wheat, sugar, and ghee. It is different from atta halwa or wheat flour halwa. It is prepared with wheat milk squeezed from soaked and grounded samba wheat. Another method is to knead and soak the wheat flour and get milk from that, but it is not a traditional way.  Thirunelveli Halwa is a popular dish with Indians around the world. 

Wheat halwa is time-consuming and really tough to stir the dish. I have learned the recipe from my mom, and my mom got it from my grandma, who can make perfect Tirunelveli style halwa. Even though it is made of lots of sugar and ghee it’s okay to have it once in a while. 

Notes

  • Wheat – When making halwa, use samba wheat which is available in all grocery stores in India or use samba wheat rava (cracked samba rava). Those living abroad can use haleem wheat. Half a cup of samba wheat will yield 1 kg of halwa. Also, the soaked wheat can be ground using a mixer or grinder.
  • Ghee – Ghee plays an important role in halwa like most Indian desserts. Use good quality, freshly made ghee to make the halwa. I made ghee with Amul butter.
  • Caramelizing Sugar – Add a little water to the sugar and caramelize, making sure it does not burn. Otherwise, it will spoil the dish. Also, when you add the remaining sugar and water to the caramel it will harden, don’t worry, it will melt if stirred constantly.
  • Nuts – Cashewnuts are optional, traditional halwa doesn’t contain nuts. You can also any nuts of your choice.
  • Pan – If possible use a nonstick pan, otherwise, it is hard to mix continuously for a long time and there are chances to burn.

Other Varieties 

Carrot Halwa is more popular in North India than in South India, and the carrot halwa made with red carrots has a rich aroma and taste. Carrot Halwa is becoming popular in South India at the present time, especially when it is served in hotels along with Gulabjamun is delicious.

Wheat Halwa is a simple halwa made with wheat flour. Instead of grinding samba wheat to prepare halwa, you can easily make halwa by extracting milk with wheat flour. Try this delicious halwa and enjoy!

Ingredients
  • 1/2 cup Whole wheat or Samba wheat
  • 1 1/4 cup Sugar
  • 1/4 cup Sugar for caramelization
  • 4 tsp Cashew nuts
  • 1/2 cup Ghee
  • 2 tsp Ghee to fry cashews
Instructions
  1. Wash and soak wheat for 8 hours.

  2. Once done, drain and add it to the mixture jar, add the required water and grind it.

  3. Strain the ground mixture and extract milk.

  4. Squeeze the milk once more (2nd time) and discard the wheat residue.

  5. Add the wheat milk to a tall glass, and keep it aside for an hour.

  6. Wheat milk will settle in the bottom with clear water on top.

  7. Discard the water, and keep the wheat milk in the bowl. (450 ml wheat milk approx.)

  8. For 2 cups of wheat milk, add 4 cups of water (900 ml).

  9. In a pan, add 1/4 cup of sugar and a little water.

  10. Cook until sugar becomes brown in colour.

  11. Add 1 1/4 cup of sugar and 1 cup of water to the same pan.

  12. Boil for 5 - 10 minutes or cook till the one string consistency is achieved.

  13. Now add wheat milk with sugar and cook over medium heat.

  14. Once it starts to thicken, add 2 or 3 tsp of ghee and keep stirring.

  15. After 20 minutes, add more ghee to avoid burning.

  16. You can see the halwa starts to bubble and reduce the flame to medium-low if necessary.

  17. After 40 minutes, add more ghee and keep stirring.

  18. After 1 hour and 10 minutes, add roasted cashew nuts.

  19. Keep stirring till the halwa separates the pan or ghee oozes out from the sides.

  20. Transfer it to a greased plate and serve hot.
