Notes
- Drain water completely from chana dal, otherwise, vadai becomes soggy.
- Grind the vada mixture coarsely.
- Soak the chopped banana blossom in buttermilk for a while to avoid bitterness.
- Fry vadai on medium heat oil to avoid burning.
- While grinding the chillis, you can add some chopped onion.

- 1 Banana flower/Vazhaipoo
- 4 tsp Buttermilk
- Few Curry leaves
- 3 Red chillis
- 1 tsp Cumin seeds
- 1/2 cup Chana dal
- Oil for deep fry
- Salt as needed

Soak chana dal and red chillis for 2 hours, once done drain water completely and keep it aside.

In a bowl add water and mix buttermilk to it.

Remove the tough husks on the outside of the flower.

Pluck the pistil inside the florets (tough and not to be consumed), discard them.

Cut florets into small pieces, add them to buttermilk water immediately to avoid browning and bitterness.

In a mixer jar, add cumin seeds, curry leaves, red chillis, and salt, pulse it.

Add soaked chana dal, grind it coarsely.

Drain buttermilk completely from the chopped banana flower, add it to the mixer jar.

Grind it coarsely.

Keep the mixture on a plate and mix everything well.

Make small patties.

Meanwhile, heat oil in a pan for frying.

Fry vadai on medium heat, cook till golden brown.

Drain in a paper towel. Serve hot.
