Chettinad Special Seeyam is a crispy evening snack made with rice and urad dal. Usually, seeyam is made on the days of fasting as rice and lentils can be soaked and ground immediately to make seeyam, no need for fermentation. I have also posted a spicy chutney that goes with the seeyam.

Some tips to make delicious Seeyam and Chutney

  • Rice and lentil can be soaked for 2 – 4 hours depending on their nature.
  • If you grind the batter in a grinder you can get more fluffy batter and the quantity of batter is also higher than grinding in the mixer.
  • You can also add the required salt while grinding the batter itself.
  • Grind the batter to vada batter consistency, if the batter is watery, it may observe more oil while frying.
  • If the batter is too thick, add a little water and mix.
  • You can add some grated coconut while sauteing the onion.
  • I have added mixed chilli powder (chilli powder and coriander powder), if you are adding plain chilli powder, add 1 tsp of coriander powder.

Ingredients
Seeyam
  • Urad dal - 1 cup (200g)
  • Raw rice - 1 cup (200g)
  • Cooking oil - 1 tsp
  • Mustard seeds - ¼ tsp
  • Urad dal - ½ tsp
  • Curry leaves - few
  • Green chilis - 2
  • Onion- ½
  • Salt - as needed
  • Cooking oil - for frying 
Chutney
  • Tomatoes - 3
  • Cooking oil - 3 tsp
  • Mustard seeds - ¼ tsp
  • Urad dal - ½ tsp
  • Curry leaves - few
  • Garlic pods - 6
  • Onion - ½ 
  • Salt - as required
  • Turmeric powder - ¼ tsp
  • Chilli powder - 2 tsp 
Instructions
Kara Seeyam
  1. Add 1 cup of urad dal to a bowl.

  2. Add 1 cup of raw rice.

  3. Rinse them well and soak for 2 hours.

  4. Then add to a mixer or grinder, sprinkle with a little water and grind finely. Add the required amount of salt and grind if desired.

  5. Add 1 tsp of oil to a frying pan. 

  6. When the oil is hot, add ¼ tsp mustard seeds and ½ tsp urad dal.

  7. Then add a little curry leaves, 2 green chillies and ½ onion finely chopped.

  8. Saute until onion is tender.

  9. Then add the mixture to the batter and mix well.

  10. Add salt if needed and stir.

  11. In a frying pan, add the required amount of oil to fry.

  12. Once the oil is hot, pinch a small ball-sized batter and drop it in oil.

  13. Put on medium heat and turn over from time to time.

  14. When it becomes golden brown, drain the oil and take it apart.

Spicy Chutney
  1. In a mixing jar, add 3 chopped tomatoes.

  2. Grind it nicely.

  3. In a frying pan, add 3 tsp cooking oil.

  4. When the oil is hot add ½ tsp mustard seeds, ½ tsp urad dal and few curry leaves.

  5. Add 6 chopped garlic cloves.

  6. Now add ½ chopped onion. 

  7. Once the onion and garlic are sauteed, add the tomato paste.

  8. Bring to a boil and add the required amount of salt.

  9. Add ¼ tsp of turmeric powder.

  10. Add 2 tsp of chilli powder and mix.

  11. Cover and simmer over medium heat or low heat for 10 to 12 minutes.

  12. You can see the oil separating on the edges, delicious chutney is ready to serve.
