Mushroom Masala is spicy and yummy street food made with cabbage and mushrooms. It is available in the major cities of South India it is popular street food in Coimbatore, Tamil Nadu, thousands of people have it as an evening snack. Though it is made with mushrooms and cabbage, it is called ‘Kalan’, Kalan means mushroom in Tamil.

Notes

  • Do not add water or add very little water while mixing batter for mushroom pakoda, cabbage and mushroom will release their own moisture while adding salt, adding water will make the pakoda soggy.
  • Finely chop mushrooms and cabbage for the best results. You can use the food processor if you have one.
  • Veggies have lots of moisture in it, it will take more time to cook, so make small size pakodas.
  • Mushroom pakoda will take 3 – 4 minutes to cook, flip it frequently to avoid burning.

Ingredients

To fry Mushroom

  • Mushrooms – 100g
  • Cabbage – 50g
  • Onions – ¼ cup 
  • Rice flour – 3 tsp
  • Maida flour – 3 tsp
  • Ginger Garlic Paste – 1 tsp
  • Chili powder – 1 tsp
  • Coriander powder l – ½  tsp
  • Garam masala – ¼  tsp
  • Turmeric powder – a pinch 
  • Salt – as required 
  • Cooking oil – to fry

For Masala 

  • Cooking oil – 2 tsp
  • Garlic pods  – 5
  • Green chillies – 2 
  • Chopped onions – ¼ cup
  • Ginger garlic paste – 1 tsp
  • Tomato – 1 (puree)
  • Turmeric powder – ¼ tsp 
  • Chilli powder – 1 tsp
  • Coriander powder – ½ tsp
  • Garam masala – ¼ tsp 
  • Tomato sauce – 2 tsp
  • Soy sauce – ½ tsp
  • Cornflour – ½ tsp
  • Salt – as required
  • Finely chopped coriander leaves – Few

Method

  1. Add 100 grams of mushrooms and 50 g of cabbage into a bowl.
  2. Add 1/4 cup of finely chopped onion.
  3. Add 3 tsp of rice flour and 3 tsp of maida.
  4. Add 1 tsp of ginger garlic paste, 1 tsp chilli powder, 1/2 tsp coriander powder, 1/4 tsp garam masala, and a pinch of turmeric powder, and required salt.
  5. Knead well add a little water if required.
  6. Roll it out into small balls, make it as small as possible.
  7. Heat oil to a pan and add the prepared mushroom balls one by one over medium heat.
  8. Fry until golden brown.
  9. Then drain the oil and set it aside.
  10. Heat 2 tsp oil in a pan and add  5 chopped garlic pods and 2 green chillies.
  11. Cook until light brown. 
  12. Add 1/4 cup of chopped onion.
  13. Add 1 tsp ginger garlic paste and fry till raw smell leaves.
  14. Add the tomato paste to the mixer and cook for a minute.
  15. Add 1/4 tsp turmeric powder, 1 tsp chilli powder, 1/2 tsp coriander powder, and 1/4 tsp garam masala, and saute until raw smell leaves.
  16. Add a little water and bring to a boil.
  17. Then add the required amount of salt, 2 tsp tomato sauce, and 1/2 tsp of soy sauce.
  18. Mix 1/2 tsp of cornflour with a little water, and mix it with spices.
  19. Once it starts to boil add the fried mushrooms and mix.
  20. Mix well and then crush it lightly.
  21. Sprinkle with finely chopped coriander leaves and turn off the stove.
  22. Delicious roadside mushroom is ready to serve.

16. Add a little water and bring to a boil.

18. Mix 1/2 tsp cornflour with a little water, and mix it with spices.
