Notes
- Oil should be smoking hot while frying bharure.
- It is recommended to rest the dough for 1 – 2 hours, If you do not have time, rest for at least 15 minutes.
- You can replace maida with wheat flour.
- You can also knead the flour with soda water.
- Adding baking soda is optional.
- You can add a little rava/sooji to keep the bhatura fluffy.

- 1.5 cups Maida
- 1/4 cup Butter
- 1/4 cup Curd
- 1/4 tsp Cooking soda
- 1 tbsp Sugar
- Salt as needed
- Oil for deep frying

In a bowl add maida, butter, curd, baking soda, sugar, and salt, mix everything well.

Combine well and add water little by little, knead and make it like a soft dough, cover the dough with a damp cloth, keep it aside for 1 hour.

After 1 hour, knead the dough once again, divide the dough into equal portions, dust with flour.

Roll it with the rolling pin around 5-inch diameter and 1/8-inch thickness.

Meanwhile, heat the oil in a pan, place the bhatura in oil. Flip it once it puffs, fry till golden.

Serve hot with chana masala.
