Brinjal/Eggplant Chutney is made with brinjal/eggplant, potatoes, onions and tomatoes. It is delicious with idli, dosa, chapati, and curd rice. Instead of making tomato chutney or coconut chutney every day, it is really good to make different chutneys like this, family members will relish every bite.
Some tips to make Delicious Brinjal/Eggplant Chutney
- Use tender brinjals to make chutney.
- Add a little tamarind pulp, bring to a boil to serve with rice.
- You can add onions to your liking.
- You can also make chutney by adding onions instead of shallots.
- Since green chillies are added, chilli powder is optional.
- Chop the eggplant and soak it in water for a while and then add it to the masala, to remove the bitterness of the eggplant.

- Brinjal/Eggplant - 6
- Potatoes - 1
- Cooking oil - 2 tsp
- Mustard seeds - ½ tsp
- Cumin seeds - ½ tsp
- Curry leaves - few
- Green chillis - 3
- Shallots - 15
- Garlic pods - 20
- Tomato - 1
- Salt - as required
- Turmeric powder - ½ tsp
- Chilli powder - 1 tsp
- Coriander leaves - a little

Add 2 tsp cooking oil to a pressure cooker.

When the oil is hot, add 1 tsp mustard seeds, 1 tsp cumin seeds, a little curry leaves and 3 green chillies.

Add 15 shallots and 20 garlic cloves and fry gently.

Add 1 tomato and the required salt and fry till the tomato is tender.

Then add ½ tsp turmeric powder, 1 tsp chilli powder.

Saute till the raw smell leaves, peel and cut 1 potato and add it.

Cut 6 brinjals lengthwise and soak in water for a while and then add.

Once the brinjals are sauteed well, add the required amount of water, cover the pressure cook for 2 whistles.

When the pressure is released, open the cooker and mash with a spoon or masher.

Finally, sprinkle little coriander leaves.

Delicious brinjal chutney is ready.
