Brown Rice Idli is a soft, fluffy, and healthy Idli. The recipe is similar to white rice idli, it is made with brown rice instead of white rice. Brown rice is high in fibre, vitamins and minerals. It is a whole grain that contains bran, on the other hand, white rice is a bran-free one that is the most important part of a grain. That is why brown rice is considered healthier than white rice. Brown Rice Idli is an easy way to add whole grain to your daily diet. You can make dosa and paniyaram with the same idli batter.
Notes
- You can replace the white poha with brown poha, it is recommended to add poha for the soft Idli.
- Brown rice requires more soaking time than regular white rice.
- Brown rice absorbs more water while grinding, add required water little by little.
- Grind fenugreek along with rice, do not grind it with urad dal.
- Sprinkle water little by little while grinding. Adding water in bulk may dilute the batter.
- Brown rice idli will take more time to cook than regular idli, it may take about 12 – 16 minutes to cook.
- You can use either a grinder or mixer to grind the batter. It is recommended to use a wet grinder for the fluffy idli.

- 3 cups Brown rice
- 1 cup White rice
- 1/2 cup Poha/aval
- 1 cup Urad dal
- 2 tsp Methi seeds/ vendayam
- Salt as needed

Add brown rice and white rice to a bowl.

Add 1/2 cup of poha along with rice, In a small cup of water add fenugreek seeds wash, and soak everything in plenty of water for 8 - 10 hours.

Soak urad dal in a separate bowl.

Once done, grind urad dal.

Then grind the fenugreek and rice together, make it a smooth paste, by adding water little by little.

Now mix the urad dal batter and rice batter and salt, combine everything well.

Ferment for 8 hours (or overnight).

The batter will become double in quantity.

Mix the fermented batter with a spatula.

Pour the batter into idli mould, cook for 12-16 minutes.

Serve hot with chutney or sambar.
