Mint Pulao is a quick and easy rice variety that is perfect for lunch boxes. Mint Pulao is made with fresh mint leaves, green chillies, cashews, peanuts, whole garam masala and cooked rice.
Mint pulao goes well with potato curry, onion or cucumber raita, vegetable kurma, etc. Mint is the most refreshing food, we can use it in many ways like mint and lemon drink, mint chutney, mint rice or pulao, biriyani, etc.
You can prepare mint pulao in the OPOS method (one pot one shot). For that grind mint leaves, green chilis, ginger and garlic, and some coconut add this paste along with the sauteed onion and add the soaked basmati rice with the mixture, and pressure cook for 3 whistles.
mint pulao can be made with leftover rice too. If you have already cooked rice you can prepare the mint pulao within 10 minutes.
Notes
- While preparing mint pulao you can grind 1/2 bunch of coriander leaves along with mint leaves.
- Grinding ginger and garlic along with mint leaves will enhance the taste.
- For spiciness, you can add chilli powder with green chillis.
- If you are preparing it for kids it’s better to grind the green chillis to avoid biting them.
- Adding the juice of 1/2 lemon while turning off the flame will enhance the taste.

- 1/2 bunch Mint Leaves
- 2 cups Cooked Rice
- 2 tsp Ghee
- 1 Bay leaf
- 3 Cardamoms
- 5 Cloves
- 10 Cashew nuts
- 1/4 cup Peanuts
- 1/2 tsp Cumin seeds
- 3 Green chilis
- 1 Onion
- 1 tsp Ginger garlic paste
- 1/2 tsp Garam masala
- Salt as needed

In a mixer jar, add 1/2 bunch of mint leaves (washed and rinsed).

Make it a fine paste.

In a pan, heat 2 tsp ghee.

Add 1 bay leaf, 3 cardamoms, 5 cloves, 10 cashews and 1/4 cup peanuts.

Cook until cashews become golden brown.

Add 1/2 tsp of cumin seeds and 3 green chilis and cook for a minute.

Now add finely chopped onion, cook until it becomes translucent.

Add 1 tsp of ginger garlic paste and cook until the raw smell leaves.

Now add 1/2 tsp of garam masala and required salt, combine well and cook for a minute.

Add ground mint paste, cook for 1-2 minutes or till the raw smell leaves.

Add the cooked rice and combine well.

Serve hot with raita.
