Millet Curd Rice/Thinai Thayir Sadam

Millet is one of the healthiest foods in the world. It is natural and nutritional food which has a number of health benefits like manages diabetes, prevents cancer, helps digestion, treats asthma and clears toxins. It is good to add millets in the day to day life and we have different varieties of millets in India like Finger Millet, Foxtail millet, pearl millet, proso millet etc.,

Here I have used Foxtail millet (thinai) to make curd rice. You can also use kudo millet (Varagu), little millet or barnyard millet. I have added chopped mango, ginger and green chilies. You can also add grated carrots, pomegranate, roasted cashew nuts to enhance the taste.

Other rice varieties – Millet Biriyani, Millet Idli, Millet Adai, arisiparuppu sadam, lemon rice, vegetable biriyani, tomato rice, brinjal rice, coconut milk pulao, jeera rice, mushroom rice, chana pulao, beans rice, coconut rice, tamarind rice/puliyodarai.

Ingredients
  • 1 cup Foxtail millet (thinai)
  • 1/2 cup Fresh homemade curd
  • 1/4 cup Chopped green Mango
  • 1 tsp Chopped ginger
  • 1 tsp Chopped green chili
  • Salt as needed
To Temper
  • 1 tsp Oil
  • 1/2 tsp Mustard seeds
  • Few Curry leaves
Instructions
  1. Wash and pressure cook millet with 1:4 ratio of millet and water.

  2. Pressure cook for 3 whistles.

  3. Once pressure released, add cooked millet in a bowl. Smash it with a spatula.

  4. Add fresh curd and salt. Combine well, add some hot water if needed.
  5. Add chopped mango, ginger and green chilies.
  6. Heat oil in a small pan, add mustard seeds and curry leaves allow it to crackle.

  7. Add seasoning and mix well.

Method
