Bitter gourd stir-fry | Pavakkai poriyal is a tasty and healthy side dish that goes well with sambar rice, rasam rice, and curd rice. It is a simple and quick dish made with less oil, there are different methods for Pavakkai poriyal, you can make it with onion, tomato and ginger garlic paste or with toor dal and tamarind pulp. I have made it in a simple way.

 

Ingredients

  • Tender bitter gourd – 2
  • Buttermilk – 4 tsp
  • Oil – 2 tsp
  • Mustard seeds – ½ tsp
  • Urad dal – ½ tsp
  • Curry leaves – few
  • Chopped onion/shallots – ½ cup
  • Salt as needed
  • Turmeric powder – ¼ tsp
  • Sambar powder – 1 tsp

Method 

Step by Step Pictures

1. Rinse and cut bitter gourd / Pavakkai into thin roundels.

2. Add buttermilk with 1 cup of water.

3. Add Pavakkai with buttermilk water. Soak for 15-20 minutes.

4.  In a pan heat oil, add mustard seeds and allow them to crackle. Add urad dal and curry leaves.

5. Add chopped onion and cook till it becomes translucent.

6. Add turmeric powder, salt, and sambar powder.

7. Squeeze buttermilk and add bitter gourd with the sautéed mixture.

8. Add little water, cook covered for 10 minutes.

9. Once done, simmer the stove and cook for 5 more minutes or cook till it becomes slightly crispy.

10. Serve Hot.
