Kothavarangai Paruppu Usili | Cluster Beans Paruppu Usili | How to make Paruppu usili

Kothavarangai paruppu usili is a healthy and tasty side dish of south India, especially popular in Tamil Nadu, goes well with sambar, rasam and curd rice. And it tastes heavenly with kara kuzhambhu and puli kuzhambhu, Kothavarangai paruppu usili made with cluster beans, chanadal, red chilis, onion and curry leaves.

 

Ingredients

  • Cluster beans – 250 grams
  • Red chillis – 5
  • Chana Dal – ¼ cup
  • Curry leaves – few
  • Oil – 2 tsp
  • Salt as needed
  • Onions or shallots – ¼ cup (chopped)
  • Curry leaves – few
  • Coriander leaves – few

Preparation

1. Soak chana dal along with red chillis for 30 minutes.

2. Cut the beans into small pieces.

Method

1. Pressure cook cluster beans for 2 whistles and strain excess water.

2. Meanwhile, drain the soaked dal.

3. In a mixer add salt, red chilis, curry leaves, and coriander leaves.

4. Add onion. Give a quick pulse.

5. Add dal.

6. Grind everything as a coarse paste by adding little water.

5. In a pan add 1 tsp of oil. Then add the ground lentils, mix well and cook for 10 minutes.

6. Add the cooked beans and cook for 5 minutes on low flame.

7. When it turns slightly brown in colour switch off the flame.

8. Serve hot with rice and sambar.
