Coconut rice is a simple and super quick dish, perfect for kids’ lunch and bachelor cooking. Coconut rice is rice flavoured with coconut, peanut, and curry leaves.

Coconut rice goes well with pickles, papads, and any other vegetable curry, gravy, or kurma. You can use leftover rice to prepare coconut rice or freshly cooked rice, if it is fresh rice cool down completely before use.

Notes

  • Cook rice in grainy texture, don’t make it mushy.  
  • You can add ½ tsp of sugar to enhance the taste.
  • You can use coconut oil, the gives a nice aroma to the rice.

Ingredients
  • 2 cups Cooked rice
  • 1 cup Grated coconut
  • 1/4 cup Peanuts
  • Few Curry leaves
  • 4 tsp Oil
  • 1/2 tsp Mustard seeds
  • 1/2 tsp Urad dal
  • 2 Red chillis
  • Salt as needed
Instructions
  1. Heat oil in a pan, add mustard seeds, allow it to pop, and add urad dal.

  2. Then add curry leaves and peanuts, roast till the peanuts become slightly brown.

  3. Add red chillis.

  4. Add the grated coconut, saute for a minute.

  5. Add salt, mix it well.

  6. Now add cooked rice, mix well, and turn off the flame.

  7. Serve hot.
