Coconut Milk for Appam / Sweet Coconut Milk

Coconut Milk is a tasty and healthy side dish for Appam and Idiyappam, it is made with Shredded coconut, jaggery, and cardamom powder. You can use either fresh or frozen coconut for making coconut milk, you can replace the jaggery powder with sugar. For 1 cup of shredded coconut, you will get 1.5 to 2 cups of coconut milk, it depends on the quality of coconut too. For getting more quantity you can also add ¼ cup of boiled cow milk for 1 cup of coconut milk.

Ingredients
  • 1 cup Shredded coconut
  • 4 Cardamom
  • 3/4 cup Jaggery powder
  • 1 tsp Sugar
  • 1 pinch Salt
Instructions
  1. Boil 1 cup of water in a pan add jaggery and bring it to boil.
  2. Meanwhile, add coconut, cardamom, sugar, and a pinch of salt in a mixer jar, add water and grind it as a smooth paste.
  3. Once done, drain it in the strainer and squeeze milk.
  4. Once again add the coconut mixer in the jar, add ¼ cup of water and repeat the process.
  5. When the jaggery syrup becomes thick, turn off the flame and cool down.
  6. Add jaggery syrup with coconut milk.
  7. Serve with Appam or Idiyappam.  
Recipe Notes
  • Make the jaggery syrup in thick consistency. Otherwise, it will turn the coconut milk watery.
  • If the sweetness is not enough, you can add some sugar.
  • If you find the coconut milk is too sweet, you can add regular milk to adjust the taste.
