Egg Masala is a tasty side dish that goes well with Idli, Dosa, Chapati, or Roti. This is prepared with boiled eggs, it’s yummy and healthy too. There are so many dishes we can prepare with egg, like an omelette, egg thokku, egg pepper fry, and egg drop curry. Egg Masala is a versatile recipe, you can serve it with breakfast, lunch, or dinner. It goes well with the tiffin and rice varieties.

  • While boiling eggs, boil them in a wide pan. Add the eggs slowly to the boiling water. Cook for 5 minutes, turn off the flame, keep it covered for 10 minutes.
  • To peel the eggs quickly and easily, keep them in the bowl along with ice cubes for 10 minutes.
  • While preparing masala, you can add red chillies according to your spiciness.
  • While cooking Onion and tomato masala, cook until oil separates.
  • Add fresh curd for the best results.
  • Add Kashmiri Chili powder for vibrant colour.

Ingredients
To Roast Eggs
  • 6 Eggs
  • 1/2 tsp Salt
  • 1/2 tsp Turmeric powder
  • 1/2 tsp Chili powder
  • 1 tsp Oil
To grind Masala
  • 4 Cardamom
  • 3 Cloves
  • 1 piece Cinnamon
  • 2 tsp Pepper
  • 1 tsp Fennel seeds
  • 3 tsp Coriander seeds
  • 10 Red chilies
  • 1 tsp Poppy seeds
For Egg Gravy
  • 4 tsp Cooking Oil
  • 1 tsp Cummin seeds
  • 1 Chopped Onion
  • 1 tsp Ginger garlic paste
  • Few curry leaves
  • 3 Green Chilies
  • 1/2 tsp Turmeric powder
  • Salt as required
  • 1 tsp Red chili powder
  • 1 Chopped Tomato
Instructions
  1. Boil 6 eggs, peel and keep them aside.

  2. Add 1/2 tsp salt, 1/2 tsp turmeric powder, 1/2 tsp chilli powder, and mix well.

  3. Heat 1 tsp oil in a pan, add the eggs and cook for 2 to 3 minutes on a medium flame.

  4. Once done, keep them aside.

  5. In a wide pan, add 4 cardamoms, 3 cloves, 1 piece cinnamon, 2 tsp pepper, 1 tsp fennel seeds, 2 tsp coriander seeds, and 10 red chillies.

  6. Roast on a medium flame for a couple of minutes and add let them cool down.

  7. Add them to a mixer jar and grind smooth powder.

  8. Heat 4 tsp of oil in a pan.

  9. Add 1 tsp cumin seeds.

  10. Add 1 chopped onion and saute.

  11. Add 1 tsp ginger garlic paste, a few curry leaves, and 3 green chillies.

  12. Cook until raw smell leaves.

  13. Add 1/2 tsp turmeric powder, required salt, and 1 tsp chilli powder.

  14. Add 1 chopped tomato, and cook until it becomes soft.

  15. Add 3 tsp of ground masala.

  16. Cook until oil separates, now add required water and mix.

  17. Add 1 cup of thick curd.

  18. Cook covered for 5 minutes.

  19. Now add boiled eggs, cook covered for 2 minutes.

  20. Now add chopped coriander leaves.

  21. Turn off the flame and serve hot.
