Fresh Watermelon Popsicle

Yummy Watermelon popsicles are refreshing on sunny days, good frozen treat on summer. It has no artificial color, flavor or sugar. It’s fresh and easy to make. Watermelon popsicles made with watermelon, honey, and lemon. I didn’t add sugar if you want you can add ¼ of sugar. It’s better to choose sweet watermelons to avoid sugar.   • Watermelon should feel heavy for its size.
  • Look for creamy yellow field spots.
  • While thump ripe watermelon will have a hollow sound / underripe will sound dull.

You can make variations in watermelon popsicles, you can add strawberry juice along with it, to make strawberry watermelon popsicles. Fill watermelon juice ½ full in a popsicle mold, freeze for 30 minutes and add kiwi chunks on top cover and freeze for 4 hours to make kiwi watermelon popsicles.

Ingredients
  • 2 cups Watermelon chunks
  • 1 Lemon
  • 2 tsp Honey
Instructions
  1. Cut the watermelon into small pieces. (Use only red part of watermelon).
  2. Add it in a blender or mixer jar.
  3. Blend until it becomes a smooth puree. (Add water in you need, I didn’t add water).
  4. Strain it to remove pulp and seeds.
  5. Keep watermelon juice in a bowl.
  6. Add honey and lemon juice.
  7. Mix well and add it in the popsicle mold.
  8. Freeze for 4 – 6 hours.
  9. Unmold and serve.
