Kuzhi Paniyaram is a delicious South Indian breakfast made with idli | dosa batter and tossed onion, green chillis and urad dal. This can be served as breakfast or dinner or as an evening snack with coconut chutney.
Paniyaram is a special dish, it’s a combination of idli and dosa, crispy outside like dosa, and soft inside like idli. Paniyaram is made by using mould called “paniyara kal” or appe pan. Paniyaram goes well with coconut chutney, tomato chutney or sambar.
Variations
- Make variations by adding vegetables like carrots, beans, and potatoes to make masala paniyaram.
- Egg paniyaram is made with beaten egg, vegetables, salt, and pepper.
- You can try sweet paniyaram with wheat flour, maida, jaggery, and cashew nuts, it is also called neiyappam or gothumai appam.
- In this post, I have prepared paniyaram with regular idli dosa batter, apart from that you can grind batter for kuzhi paniyaram, which is made with pacharisi or raw rice, idli rice, urad dal and fenugreek seeds. Soak everything together for 6 hours, grind it smoothly, add salt and ferment for 6 – 8 hours. Add the seasoning mix just before preparing paniyaram.

- 2 cups Idli batter
- 1 tsp Oil
- 1/2 tsp Mustard seeds
- 1/2 tsp Urad dal
- 1 Onion
- Few Coriander leaves
- 2 Green chilis
- Few Curry leaves

Heat oil in a pan, add mustard seeds and urad dal and allow them to crackle.

Add curry leaves and chopped green chillis.

Add chopped onion and cook till the onions become translucent.

Add the sautéed mixture with the batter and add coriander leaves and combine everything well.

Meanwhile, heat the paniyaram pan.

Pour batter and cook covered on a medium flame for 2-3 minutes.

Flip over and cook for a few more minutes.

Serve hot with chutney.
