Kulfi is delicious Indian ice cream, that is loved by everyone from children to adults. Buying and eating kulfi from kulfi wala, who used to ring the bell during the summer, is one of the sweetest memories of our childhood. We can’t forget those experiences of eating delicious kulfi along with the kids next door and cousins, Of course, everyone will. Delicious kulfi can be easily made at home using milk, sugar, almond, and pistachios. This can be done in a maximum of 30 to 40 minutes. If done at night, put it in the fridge, and in the morning yummy kulfi will be ready. I have made kulfi without mould, simply using coffee tumblers, apart from that you can use plastic teacups, paper cups, popsicle mould, or kulfi mould, whatever the mould, but the instructions are the same.

Some Tips to Make delicious kulfi

  • Use thick full-fat milk for kulfi.
  • While boiling milk, stir frequently to avoid burning.
  • Condensed milk is optional, if added, kulfi tastes like a store-bought one.
  • With the exception of almond, and pistachios you can add cashews or walnuts as you like.
  • Saffron can be added if desired.
  • Add sugar to your taste.
  • Don’t grind the almonds and pistachios smooth powder, grind them coarsely.
  • Kulfi mould can be used if available or can be kept in a homemade tumbler or paper cup.
  • After taking it out of the freezer put it in water for 10 to 20 seconds and then gently take it out.

  • Milk - 1 liter
  • Almonds - 15 
  • Pistachios - 10 
  • Cardamom - 3  
  • Condensed Milk - 1/4 cup
  • Saffron - 1 pinch 
  • Milk - to soak saffron
  • Sugar - 1/4 cup 
Instructions
  1. Add one liter of thick full-fat milk to a pan.

  2. Put on medium heat and boil the milk.

  3. Boil one liter of milk till it becomes half a liter and stir from time to time.

  4. In a mixer jar, add 15 almonds, 10 pistachios, and 3 cardamoms.

  5. Grind it coarsely without grinding it finely.

  6. Then add 1/4 cup of condensed milk to the milk and mix.

  7. Soak a pinch of saffron in milk for a while and then add.  

  8. Then add the powdered almonds and pistachios.

  9. Boil on medium heat for 2 minutes.

  10. Then add 1/4 cup sugar and mix.

  11. Once done, turn off the flame and cool down completely.

  12. After cooling pour the mixture into the mold.

  13. Cover it with aluminum foil or plastic wrap.

  14. Place the ice cream stick in the middle of it.

  15. Place in the freezer for 8 hours or overnight.

  16. After 8 hours take kulfi out and place in water for 10 to 20 seconds.

  17. Now slowly take it out.

  18. Yummy malai kufi is ready to serve.

Method
