Murukku is a crunchy, crispy and yummy snack, especially eaten during festival seasons. It is a healthy and traditional dish, a little tricky but it is easy to learn. Rice flour murukku has lots of variations, you can make it with rice flour and urad dal or rice flour and the roasted gram or rice flour, basen flour, and roasted gram. I have made murukku with rice flour, urad dal flour, and roasted gram flour.

Notes

  • You can use store-bought rice flour and urad dal flour, you can powder the roasted gram easily with your mixer.
  • The important point to be noted while kneading dough is to make it soft and free-flowing. otherwise, you cannot make a murukku shape, it will break into small pieces.
  • For homemade rice flour, soak raw rice for 2 hours and dry it in shade, grind it with a mixer jar or food processor and sieve.
  • To store the rice flour, roast it for a few minutes, cool it down and store it in an airtight container for up to 1 week.
  • You can also add 1 tsp of jeera|cumin seeds to make the murukku more flavourful.
  • Cool and store in an airtight container. It will be fresh for 2-3 weeks.

Ingredients
  • 2 cups Rice flour
  • 1/2 cup Urad Dal
  • 1/4 cup Roasted gram
  • 1/4 tsp Asafoetida
  • 1 tsp Sesame seeds
  • Salt as needed
  • 2 tsp Butter
  • Oil for frying
Instructions
Urad Dal Flour
  1. Add 1/2 cup urad dal to a pan and fry for 2-3 minutes or until slightly browned.

  2. Cool the urad dal and add them to a mixing jar and grind to a fine powder.

  3. Once done, sieve the urad dal flour and keep it aside.

Roasted Gram Flour
  1. Add the roasted gram to the mixer jar and grind well.

  2. Sieve the flour and set it aside.

Murukku Dough
  1. In a bowl add 2 cups rice flour, 1/2 cup urad dal flour, 1/4 cup roasted gram flour, salt, sesame seeds, 2 tsp butter and 1/4 tsp asafoetida.

  2. Combine everything well.

  3. Add a little water and make a smooth, free-flowing dough.

  4. Place the star-shaped disc on the murukku maker and grease it with oil, cut the dough into small pieces and fill in the murukku maker.

  5. Gently press in a circular motion to make a murukku shape.

  6. You can make it on parchment paper or with a spatula.

Murukku
  1. Heat the oil in a pan, add a pinch of flour to the oil and check if the oil is hot.

  2. Gently dip the nozzle in the spoon into the oil.

  3. Deep fry over medium heat. Flip it over after a few minutes.

  4. Once the bubbles stop, remove them from the oil and strain it onto kitchen paper.

  5. Cool the murukku and store them in an airtight container.

Method

Step by Step Pictures

  1. In a pan add 1/2 cup of urad dal and dry roast for 2-3 minutes, or roast till slightly golden brown.

  2. Cool the urad dal and add them to the mixer jar and make a fine powder.

  3. Once done, sieve the urad dal flour and keep it aside.

  4. Add the roasted gram to a mixer jar and grind well. Once done, set aside.

  5. In a bowl add 2 cups of rice flour, 1/2 cup urad dal flour, 1/4 roasted gram flour, salt, 1 tsp sesame seeds, 2 tsp of butter and 1/4 tsp of asafoetida.

  6. Combine everything well. Add water little by little and make a soft and free-flowing dough.

  7. Place a star-shaped disc on the murukku maker and grease it with oil, cut the dough into small pieces and fill in the murukku maker.

  8. Gently press in a circular motion to make a murukku shape.
