Crispy Kara Boondi is a must-have delicacy for Deepavali. This can be done very easily in less than half an hour. It is made with besan, rice flour, peanuts and curry leaves. Apart from Diwali snacks, it is a perfect snack to munch on, delicious when served with coffee or tea in the evening. 

Recipe Notes

  • To make boondi, prepare batter in a dosa batter consistency.
  • If the batter is too thick the boondis will be hard and if the batter is diluted the boondi will dissolve in the oil, so mix the batter to the proper consistency.
  • Do not skip baking soda, without adding baking soda the boondi will not become pearly.
  • When frying the boondi, keep it on medium-high heat and fry the boondi till it turns golden.
  • You can also add a few cashew nuts, pistachio, along with peanuts.
  • Add salt and chilli powder to taste.
  • Once done, let it cool and store in an airtight container for up to a month.

Ingredients
  • Besan - 1 cup - 100g
  • Rice flour - 2 tsp
  • Salt - as needed
  • Turmeric powder - ¼ tsp
  • Baking soda - 1 pinch
  • Asafoetida - ¼ tsp
  • Peanuts - ¼ cup
  • Curry leaves - few
  • Chilli powder - ½ tsp
  • Cooking oil - for frying  
Instructions
  1. Add 1 cup of besan to a bowl, along with 2 tsp of rice flour, the required amount of salt, and ¼ tsp of turmeric powder.

  2. Add a pinch of baking soda to it. 

  3. Once mixed then add a little water and mix without lumps.

  4. Then add ¼ tsp of asafoetida.

  5. Add the required amount of water and mix to make dosa batter consistency.

  6. Heat oil in a pan over medium-high heat.

  7. Pour a little batter into a boondi ladle or filter spoon. You can see boondis drop on oil.

  8. Fry until golden brown.

  9. Then drain the oil and set it aside.

  10. Then add ¼  cup of peanuts and fry over medium heat.

  11. Fry until golden/crispy and set aside.

  12. Turn off the stove and fry with a little curry leaves.

  13. In a bowl, add the prepared boondi, peanuts and curry leaves.

  14. Add the required amount of salt.

  15. Then add the required amount of chilli powder and mix.

  16. Crunchy kara boondi is ready to serve.
