Paruppu Vada/Masala Vada is a popular snack item of south India. Paruppu vada is made with chana dal, red chili, and curry leaves. You can make variations by adding 1/3 of toordal and 1/3 of moongdal and chanadal, that is mixed dal healthier and tastier than the regular one.

Vegetable Cutlet
- 1.5 cups Chana dal
- 6-8 Red chilis
- 1/2 cup Onion/shallots (chopped)
- Few Curry leaves
- 1 tsp Fennel seeds
- 1 tsp Jeera
- Salt as needed
- Oil for frying

In a bowl add washed chana dal and add red chilis.

Soak for at least 2 hours.

Once done drain water.

In a mixer jar, add soaked red chili, onions, curry leaves, salt, jeera, and fennel seeds. Give a quick pulse.

Add chana dal in a mixer jar.

Make it as a coarse paste.

Keep the ground mixer in a bowl, mix well.

Make it as small patties.

Heat oil in a pan, add vada one by one.

Fry it on a medium flame for few minutes or fry till golden brown.

Once done, drain it in a paper towel and serve hot.
