Rosbora is a Bengali sweet and it is popular in the northern regions of India. We can prepare easily with the ingredients available at home. At the same time, it is a less time-consuming dish. You can give a quick treat to your surprise guests. It is prepared with sooji, sugar, and cardamom powder.

  • While adding sooji, add nice sooji if it is coarse grind it once in a mixer jar and use.
  • For sugar syrup, it should not be too thick or too thin. Prepare it slightly thinner than gulab jamun syrup.
  • You can replace the cardamom powder with rose essence to enhance the flavour.
  • Baking Soda is optional.
  • If saffron is not available add a pinch of turmeric powder.
  • Soak the sweets in sugar syrup for 15 minutes.
  • Roast the rava on low flame to avoid burning.

Ingredients
  • 1 cup Rava/Sooji
  • 2 tsp Ghee
  • 1.5 cups Milk + 2 tsp milk
  • 2 tsp Milk Powder
  • 3/4 cup Sugar
  • 1/4 tsp Cardamom powder
  • 1/2 tsp Saffron
  • 1/4 tsp Baking Soda
  • Oil for frying
Instructions
  1. In a wide pan, heat 2 tsp of ghee.

  2. Now add 1 cup of sooji and roast for 3 to 4 minutes on low flame.

  3. Add 1.5 cups of milk and mix well.

  4. Once sooji cooked well, keep it aside.

  5. In a pan, add 3/4 cup of sugar and add 1 1/4 cup of water and bring it to boil.

  6. Add 1/4 tsp cardamom powder.

  7. Add 1/2 tsp saffron.

  8. Cook until sugar syrup thickens.

  9. In the cooked rava, add 2 tsp milk powder and mix well.

  10. Add 2 tsp milk and 1/4 baking soda, make a smooth dough.

  11. Now make small balls and flatten them.

  12. Add one by one slowly into the medium hot oil.

  13. Cook until golden brown.

  14. Then add them into the sugar syrup and soak it for 10 to 15 minutes.

  15. Yummy Rosbora is ready to serve.
