Vatha Kuzhambu is a delicious kuzhambu variety. Vathal is a vegetable that is soaked in salted buttermilk and dried in the sun for 4-5 days. It can be stored in a clean container for 6 months to 1 year. The taste and aroma are immense when the vathal is added to the kuzhambu.There are many types of vathals like sundakkai vathal, pavakkai vathal, raw mango vathal, manathakkali vathal, etc. In this post, I have shared sundakkai (Turkey berry) vatha kuzhambu. In the same way, you can make vatha kuzhambu using any kind of vathal. 

 Some Tips to Make Delicious Vtha Kuzhambu

  • Use gingelly/sesame oil to vatha kuzhambu, the taste and aroma are good when you add sesame oil than any other oil.
  • I have used sundakkai vathal (sun-dried turkey berry), you can make vatha kuzhambu in the same way with all kinds of vathal.
  • Add more garlic and onion to make the curry tasty.
  • When adding tamarind add a little more than the mentioned amount if the tamarind is slightly sweet, and add less if the tamarind is too sour. 
  • It can be stored at room temperature for up to three days and refrigerated for up to 1 week.
  • If the curry is too sour, add jaggery and adjust accordingly.
  • Vatha kuzhambu goes well with papad, all kinds of stir-fried vegetables and kootu.

Spicy curry with sun-dried vagetable

Ingredients
  • Sundakkai vathal - ¼ cup 
  • Sesame oil - 50ml
  • Fenugreek seeds - ¼ tsp
  • Cumin seeds  - ½ tsp
  • Mustard seeds - ½ tsp
  • Curry leaves - Few
  • Garlic pods - 50g
  • Shallots - 100g 
  • Tomato - 2
  • Salt - as required 
  • Turmeric powder - ¼ tsp
  • Coriander powder- 2 tsp
  • Chilli powder - 2 tbsp
  • Cumin powder - ½ tsp 
  • Tamarind - A small lemon size
  • Jaggery - as required 
Instructions
  1. Add ¼ cup sundakkai vathal in hot water and soak for 10 to 15 minutes.

  2. Heat 50ml sesame oil in a pan and add ¼ tsp fenugreek seeds, ½  tsp cumin seeds, and ½  tsp mustard seeds.

  3. Once the mustard seeds and cumin seeds and splattered add curry leaves.

  4. Add 50g of garlic pods and cook on a medium flame.

  5.  After the garlic is slightly browned, add 100g of shallots and cook gently.

  6. When the onion is sauteed, grind 2 tomatoes finely and add them with the mix.

  7. Stir until the raw smell leaves and then add the required amount of salt, add 1/4 tsp turmeric powder, 2 tsp coriander powder, 2 tsp chilli powder and ½  tablespoon cumin powder.

  8.  After it is slightly cooked, add the tamarind pulp and mix well.

  9. Add the required amount of water, cover and let it boil for 5 minutes.

  10.  Then add the soaked vathal.

  11. Cover again and bring to a boil until the oil separates, stirring occasionally.

  12. When the vatha kuzhambu boils well and thickens, add a little jaggery and cook for 2 minutes on low heat.

  13. Delicious vatha kuzhambu is ready to serve.
