Some tips to make delicious millet kozhukattai
- Keep the millet on low flame while roasting and roast until fragrant.
- While grinding it, grind it moderately, not coarsely like rava and not very fine like rice flour.
- Add the millets to the boiling water and stir on low flame.
- Turn off the stove when it gets a little lumpy or it might get solidified.

- Millet - ½ cup
- Cooking oil - 1 tsp
- Mustard - ½ tsp
- Urad dal - ½ tsp
- Curry leaves - few
- Dry chilli - 1
- Asafoetida powder - 1 pinch
- Salt - As required

Add ½ cup of millet to a pan.

Keep it on low flame and fry until fragrant.

Then let it cool and add it to the mixer and grind it.

Heat a tablespoon of oil in a pan and add ½ tsp of mustard, ½ tsp of urad dal, a dry chilli, a pinch of cardamom and a pinch of asafoetida powder.

Add a cup of water to it and boil it.

Add the required amount of salt to it.

When the water boils, add the ground millet.

Keep on low flame and stir till it thickens a bit.

Then turn off the stove, cover it and let it cool.

After it cools down a bit, pour it into a bowl and knead it once.

Roll it into small balls and press it with four fingers.

Place the prepared kozhukattai on an idli plate or steamer plate greased with oil.

Pour water into the idli pan and heat it, place the idli plate and cook for 10 – 15 minutes.

Delicious millet kozhukattai is ready.
